I have been craving fresh, cold desserts after dinner (or sometimes lunch!) and was inspired to make this delicious raw coconut lime cheesecake after being given a stack of homegrown limes from my husband's tree farm. This dessert is so quick and easy to make and I love to have it cut up into pieces ready in the freezer so that I can quickly thaw out at dinner time. It is also to great to make days ahead of time when you know you have people coming over for dinner and all you have to do on the night is thaw it out just before serving!
I used a recipe from Flannery's and just adjusted it to use honey instead of maple syrup because it was what I had on hand at the time. Check out their website for the full recipe directions.
raw coconut lime cheesecake
- 2 cups macadamias or cashews (I used a cup of each)- soaked and rinsed
- 1/2 cup coconut oil
- 1/2 cup maple syrup or honey (you could use rice malt syrup as sugar free alternative)
- 1/2 cup lime juice and some lime zest
- 1 tsp vanilla extract
- 1/4 cup coconut milk
