Gotta love another bliss ball recipe! There are so many recipes out there on the internet but I really enjoy experimenting with my own flavour combinations and I thought this one was too good not to share!
This bliss ball recipe gives you a nice sweet treat with a bit of a difference. The tahini gives a nice chewy texture and the flavour of the lemon is refreshing and zingy!
Tahini is so versatile and you can use it in both sweet and savoury dishes. It is also highly nutritious! Tahini contains minerals such as, phosphorus, lecithin, magnesium, potassium and iron. It is a good source of calcium, Vitamin E and many of the B Vitamins. Tahini is approximately 20% complete protein and contains healthy fats. So many reasons to include this nutty goodness in your pantry staples. I use it heaps to make a 'creamy' salad dressings or drizzle over sauteed vegetables.

LEMON-TAHINI-GOJI BLISS BALLS
- 2 cups almonds
- 10 medjool dates
- 1 cup coconut desiccated
- 2-3 Tbs tahini
- 1 Tbs coconut oil
- zest and juice of a lemon
- 1/3 cup goji berries
- Blitz the almonds in a food processor until they are a fine crumb
- Add the rest of the ingredients and blend until the mixture clumps together
- Roll the mixture into bite sized balls and refrigerate
- Makes approximately 30 balls
These bliss balls will keep in the fridge for about a week or so. Alternatively they also freeze well, just take out of the freezer about 10 minutes before eating.
